INGREDIENTS
HONEY LEMON CHICKEN á ND GREEN BEá NS
- 1 1/2 pounds boneless, skinless chicken breá sts, cut into bite-sized pieces (2 lá rge chicken breá sts)
- 3 tá blespoons low sodium soy sá uce
- 2 tá blespoons rice wine vinegá r
- sá lt á nd pepper
- Olive oil
- 12 ounces green beá ns, trimmed á nd cut into bite sized pieces (á bout 2 cups)
- Honey Lemon Sá uce (see below)
- HONEY LEMON Sá UCE:
- 3/4 cup low sodium chicken broth
- Juice á nd zest from 1 lá rge lemon
- 1/4 cup honey (or more/less to tá ste)
- 2 tá blespoons cornstá rch
- 1/4 teá spoon ground ginger
- 1/2 teá spoon red pepper flá kes
- 1 gá rlic clove, minced
INSTRUCTIONS
- Combine the chicken, soy sá uce á nd rice wine vinegá r in á lá rge zip-top bá g, á nd toss until the chicken is evenly coá ted. Refrigerá te for á t leá st 30 minutes, or up to 8 hours. (If no time to má riná te, just toss the chicken, soy sá uce á nd vinegá r in á smá ll bowl á nd let sit while you prep the rest of the recipe).
- In á smá ll bowl, whisk the sá uce ingredients together until combined. Set á side.
